You can have fresh salad greens this winter. It’s not quite as easy as the Spring salad garden, but it isn’t really all that difficult, either. Most salad greens like cooler temperatures and will accept slightly lower light levels than other veggies like tomatoes and peppers. You can grow them in simple structures like cold frames ( just a box made of wood, cement blocks, straw bales or similar materials ) that can be covered with a piece of glass, fiberglass, or even clear polyethylene plastic when temperatures are expected to be below 38-40 degrees F. Smaller pots that can be moved indoors during cool weather can also be used for spinach and lettuce.
